Huon Wood Roasted Salmon with Zucchini Noodles

INGREDIENTS

  • 2 x 150g Huon Wood Roasted Salmon available from Catalano's Seafood
  • 2 tbsp pine nuts
  • 1/2 cup basil leaves
  • 1/4 cup parmesan (shaved)
  • 1 tbsp rice bran oil
  • 3 zucchini (medium)
  • 1 lemon (zest and juice)

METHOD

  1. Gently break up hot smoked salmon into bite size pieces
  2. Heat a large fry pan with the rice bran oil and toast pine nuts until golden. Add hot smoked salmon.

  3. Meanwhile wash and dry the zucchini and using a julienne or speed peeler make noodles or ribbons

  4. Reduce the heat and add zucchini noodles, shaved parmesan, basil leaves and juice and zest of the lemon and gently toss together

  5. Serve with extra flaked salmon and parmesan as desired
