Captain American Lunch

Method

1. Lunch: to make egg pasta salad, combine pasta, egg, capsicum and cucumber with yoghurt and lemon juice. Serve with carrot sticks and broccoli.

2. Snack 1: to make strawberry & blueberry yoghurt cup, combine blueberries and apple juice in a small saucepan and simmer for 2 minutes or until blueberries are plump. Mash with a fork. Set aside to cool completely. Place yoghurt into a cup, use blueberry mixture and strawberries to form captain america’s shield. Cover and chill until ready to pack into lunch box. serves 1

3. Snack 2: pack crackers and hommus separately. To make a swap, swap rice crackers and hommus with 2 vita-weat crackers and 1/4 avocado.

Ingredients

  • 1/2 cup cooked wholemeal pasta
  • 1 Woolworths Select Free Range Egg, boiled, peeled, chopped
  • 1/4 small red capsicum, chopped
  • 1/3 small Lebanese cucumber, chopped
  • 2 tsp Chobani Plain Yoghurt
  • 1 tsp lemon juice
  • 1/2 small carrot, cut into sticks
  • 3 steamed broccoli florets
  • 1/3 cup frozen blueberries
  • 2 tsp apple juice
  • 100g Chobani Plain Yoghurt
  • 3 fresh strawberries, sliced
  • 6 Woolworths Select Brown Rice Crackers
  • 1 tbs Willow Farm Hommus
