Winter Vegetable & Grain Salad


  • 8 baby beetroots (golden and purple), sliced finely on a mandolin
  • ½ fennel bulb, sliced finely on a mandolin
  • ¼ cup continental parsley, chopped finely
  • 1 bunch of baby radishes, cleaned and quartered
  • ½ cup coarse bulgar or farro
  • 1 cup vegetable stock
  • 100g feta cheese
  • 3 tbs extra virgin olive oil
  • 2 tbs balsamic vinegar
  • Salt and pepper to taste


  1. Place bulgar and stock into a saucepan with lid on and simmer on low for 20 minutes or until grain is tender. Try not to mix it while cooking. Once cooked, cool until cold enough to touch.
  2. Place everything into a large bowl and combine well.
