Fried Peanut Butter Chicken


  • 1 cup Woolworths crunchy peanut butter
  • 2 tbs sweet chilli sauce, plus extra to serve
  • 1 tbs soy sauce
  • ½ cup plain flour
  • vegetable oil, for shallow frying
  • 4 chicken thigh fillets
  • lime wedges, to serve
  • 1 red chilli, sliced, to garnish


  1. Place peanut butter into a bowl. Add ½ cup boiling water and stir until a smooth sauce forms. Add chilli sauce and soy sauces. Place flour into a separate bowl.
  2. Heat 3cm of oil in a large saucepan over a medium-high heat. Cut each chicken fillet into 3 large pieces and coat lightly with flour. Coat floured chicken with peanut butter sauce and add to hot oil, 3-4 fillets at a time. Cook for 3-4 minutes each side or until golden and cooked through. Transfer to a tray lined with paper towel.
  3. Serve chicken with lime wedges, sliced chilli and extra sweet chilli sauce.
