Fluffy Buttermilk Pancakes


  • 1 cup of self raising flour, sifted
  • 2 tablespoons of caster sugar (optional, if you prefer sweet pancakes over more savoury)
  • 1 cup of milk (at room temperature is best)
  • 1 teaspoon of vanilla essence
  • 1 egg, beaten (at room temperature is best)
  • 2 tablespoons of butter, melted


  1. Combine the flour and sugar in a bowl and mix well.
  2. In a seperate bowl, combine the milk, vanilla essence, butter and egg.
  3. Create a small well in the bowl with the dry ingredients, and pour in the wet mix. Stir all ingredients to form a thick batter; avoid over mixing to ensure best results. Set aside and allow the ingredients to rest for 10 minutes.
  4. Heat a large frying pan until hot. If a few drops of water sizzle right away, your pan is ready! Lightly grease with butter or canola oil.
  5. Using a ladle or a 1/4 measuring cup, pour the mixture into the pan.
  6. After a minute or two, when you notice bubbles forming in the surface, flip the pancakes and cook for another 30 seconds to a minute.
  7. Serve while hot and ejoy these delicious pancakes while you can – with maple syrup, butter, jam, honey, berries, lemon juice, sugar or whatever your tastebuds fancy!
