Watermelon With Prawns & Feta

Ingredients

  • 30 small cooked, peeled prawns from Catalano's Seafood
  • ½ seedless watermelon
  • 250g feta
  • 3 tbs shredded mint

Method

  1. Cut watermelon into slices 1.5cm thick. Cut out rounds using a 3cm-diameter cutter. Crumble feta in a bowl. Mix with mint. Top watermelon pieces with feta mixture and a small cooked, peeled prawn. Serve.
